Laurel Garden Club of Highlands, North Carolina, finished its Tour of Kitchens project. For those who contributed time, money, support and materials we thank you greatly.  


The Patrons Party at the Rainwater estate was grand!

The tour featured seven Highlands kitchens ranging from mansions to rustic cottages, plus peeks into the homes and gardens. We sold out! 

So many asked for the recipe for the delicious Mushroom Soup (Bobby Lee & Trish Carey) served at one of the kitchens and here it is:
Mushroom Soup (Bobby Lee & Trish Carey)
1 can of Beef Broth
½ cup Madeira Wine
4 cups Chicken Broth
1-1/2 Packages of white Mushrooms, sliced
3 packages of fresh Shitake Mushroom, sliced. Add other mushrooms of choice.
2 tbs. Butter and 2 tbs. Olive Oil
6 Green Onions sliced thin
1 Medium Onion diced
1 cup Red Bell Pepper diced
5 cloves Garlic minced. (more if you like)
4 tbs. Tomato Paste and 3 tbs flour to thicken soup
½ to ¾ cup Heavy Cream
2 tbs Mushroom Dimi-Glacie (1 pack)
2 tbs Veal Dimi-Glacie (1 pack)
1 tbs. L&P Worcestershire Sauce,
1 tsp. Herbs de Provence,
2 tsp salt,
½ to ¾ tsp Cayenne pepper,
1 tea Cumin, and
1 tsp paprika
----------------------------------------------------------------------------- Melt butter and Olive Oil in a large Heavy Pot on medium high heat.
Add onions stir, add green onions, Red Bell Pepper, & garlic.
Cook a min. or two until tender.
Add sliced mushrooms
Cook down some
Add Tomato paste, stir in, add flour, and blend in.
Add L&P Worcestershire Sauce, Salt & Pepper
Add Madeira Wine cook a min.
Add Broths (Beef & Chicken)
Bring to a boil
Turn heat to simmer, cook until tender. Add Demi Glace make sure it incorporates fully.
Purée partially leave some larger bits of mushrooms for texture using a hand immersion mixer (boat motor) then add ½ Cup Cream. Add more if desired, and Stir in. Serve, Keeps well.
